Q. How do i make panamanian aji chombo hot suace? i once tried a panamanian sauce called aji chombo it was homemade and yellowish-green in color. my friend who lived many years in panama carried a bottle for years. she said that most used it sparingly due to it being too hot. it was more green than yellow, thick with chuncks of pepper and lots of seeds. i have searched fo "famous" panama hot sauces but none compare.
"They are as hot but have a lot more flavour..."
Aji Chombo is a type of chilli, closely related to habanero or scotch bonnet. That ties in with your friend using it sparingly.
You can buy it online, look for D'Elidas or one called GranMa
You can buy a wide variety of habanero or scotch bonnet sauces in most ethnic supermarkets, especially caribbean. Windmill Yellow sauce is similar.
to make it yourself, you would buy some habaneroes or scotch bonnets (same sort of supermarket), you're unlikely to get true aji chombos unless you grow them yourself (see available online). Remove the stalks. You then need to chop them, this can be dangerous - get a tiny splash in your eye and you will regret it. It's best to wear latex gloves, or use a food processor. Do NOT chop with bare hands (and a knife of course) and then go to the toilet. It hurts like hell. If you get the juice on your hands they can burn for days.
Then they're chopped or minced, add water, 20% vinegar and salt to taste. if you can taste it! it should be fairly thick, pourable but not runny. The 20% vinegar stops mould forming, chillies are prone to botulism so this is important.
You can add sugar too for a sweeter sauce.
if you like this sort of heat, try seeking our some naga jolokia chillies. They are as hot but have a lot more flavour.
You can buy them fresh from http://www.dorsetnaga.com/ or as seeds from www.reallycoolseeds.co.uk.

Q. Hot sauce song - panama city radio 6-7 years ago? hi. i've been searching for a long time for a song my friends and i heard while on spring break in the panama city, fl area. it was played during a talk radio show and the best way i can describe it would be "cajun / james brown-ish" i remember one of the lyrics going something like "i've got some road kill in my trunk and i think it might be a skunk" and then "but you know it'd go better with some hot sauce. good gawd"
this is random, but who knows about the power of the internet.
thanks!
Probably too long ago. There's a lot of parody songs done by syndicated jingle and comedy services that are never sold at retail. They're just offered to radio stations (usually morning shows). They only last a few days and are usually topical (esp. if heard on a talk show - it was probably locally produced by a staffer). Most of them never make it that far.
I submitted one recently about Britney shaving her head (to the tune of "Glad All Over" by Dave Clark Five), but I was a few hours late and it was old news - funny song, though.
It might have been Weird Al, but I suspect the former and lost to history...
... but you might get lucky, hang around and see if you get a better answer.

Q. Is panama city hot and humid? i may be visiting, and possibly living there. is it hot and humid? i don't know the elevation of the city. gracias.
Both, until the beginning of April is the best weather, sunny to go to beaches. From April to December, some days are rainy, but good weather.
My recommendation is to try it and you will see that you will want to stay.
For me is the best Latinoamerican Country for many reasons:
Government: Democratic
Currency: USD $
Shopping: Very Cheap, Albrook Mall.
Rent: $350 monthly for rent in a good place.
Very secure in most of the places, i mean in the city.
Enjoy it.

Q. Can a labrador retriever live comfortable in a hot climate such as panamá? here it's hot and we have a lot of humidity too. it's hot on summer and it rains a lot in winter (we only have those 2 seasons)
will the hot climate and the humidity affect the shedding of the dog, like making it heavier or something like that?
They'll tend to shed the right amount for the climate they're in once they acclimate. In other words, a dog that moves to a cold climate will within a year or so be developing a thicker coat, and one that moves to a warm climate a thinner one. They still shed in both climates and they'll still typically shed twice a year when signaled to do so by the change in length of the days.
Look for a yellow lab instead of a black or chocolate one to withstand the warm climate better. Labs would tend to like rain more than most dogs.
Really the simplest thing is to purchase or adopt a dog locally. Then it's already acclimated.
